Tasting notes

Predominantly made with one of our favourite varieties Tremlett's bitter, this dry cider has a wine like quality about it. It's light and delicate with a tiny hint of drying astringency lifted by a merest whisper of residual sugar.

Naturally sparkling, this cider has been disgorged à la volée. In using this ancient French technique, used in champagne making, we are able to remove the sediment from the bottle. The work is all done by hand and is slow, labour intensive and highly skilled but is preferable to us in terms of retaining flavour than the more industrial process of filtering.

Food pairing suggestions

Off dry with notes of orange peel, pair this with slow cooked beef alongside roasted beetroot, parsnips and potatoes. At best now until 2030.

The story behind the cider

In folklore, hares have often been associated with the transition from Summer into Autumn, bathed in silver light from the harvest moon, leaping forward to greet the new season.

At a time of the year when most creatures are readying themselves for the slumber of Winter, the cidermaker is doing quite the opposite. Apple season begins with the last of the Summer warmth and for us, will continue until the last apple is gathered by hand and pressed at around Christmas, by which time our limbs will be as heavy as the sacks of apples we’ve just spent the last three months filling!

Does the cider have a use by date?

Unopened and stored in a cool, dry place our cider will be good to drink for around three years  As a general rule, like wine, cider has excellent capacity for ageing.

Is the cider vegan friendly?

Yes, our only ingredient is apples!

Is the cider organic?

We only use organically grown, unsprayed apples in our cider. Due to the number of orchards we care for belonging to other people we are not able to officially certify ourselves organic at this point in time.

Does the cider contain sulphites?

Our cider does not contain sulphites, however our perries contain a trace amount.
