Tangled together in this cider are two of the most rambunctious apples we work with; Knotted Kernel and Foxwhelp . Knotted Kernel is famed for its deep earthy tannins – there’s something about this apple that makes it taste almost ancient, wheras by comparison, Foxwhelp is full of bright, buoyant, youthful acidity. These two apples couldn’t be more opposite, with the single exception of the time that they leave the tree and ripen, neatly fulfilling the old saying, ‘what grows together, goes together’. A blend that went against conventional wisdom, in this instance, we believe that opposites really do attract!

Both varieties were harvested by hand from ten 90 year old trees in Herefordshire’s Golden Valley.

With notes of strawberry, red currant and zippy sherbet, tempered by enveloping warm tannins; this cider pairs beautifully with ripe gooey Brie.
