This sparkling co-ferment is a collaboration between six friends and born of a shared obsession with slow, properly made food and drink. Fermented and bottled by Tom and Lydia of Artistraw by co-macerating Rondo grape skins grown by James and Susan of Whinyard Rocks which were pressed by Mark and Laura of Black Mountain Vineyard, this bottle represents the good things that happen when in fine company!

Bright foxwhelp acidity is enveloped in the bold fruit flavours of Rondo grape skins and brings to mind a nose reminiscent of a summer pudding laden with juicy blackcurrants. Sharp and precise, we think this pairs excellently with a fatty piece of pork belly or a sumptuous cheesecake.

Lydia also loves serving it with ice and a sprig of mint!

In October 2022 Mark Smith of Black Mountain Vineyard delivered us some freshly pressed rondo grape skins which we immediately layered into our fresh foxwhelp apple pomace. We left this overnight to macerate and then met up again the next day and pressed it. After fermentation over winter, it was bottled in Spring 2023 and then aged for two years.

Does the cider have a use by date?

Unopened and stored in a cool, dry place our cider will be good to drink for around three years  As a general rule, like wine, cider has excellent capacity for ageing.

If the cider has been opened we recommend sealing with a champagne stopper and storing in the fridge for no more than 24 hours.

Is the cider vegan friendly?

Yes, our only ingredient is apples!

Is the cider organic?

We only use organically grown, unsprayed apples in our cider. Due to the number of orchards we care for belonging to other people we are not able to offically certify ourselves organic at this point in time.
