Tasting notes

To celebrate our Wassail, each year we release a cider to accompany the merry making in our orchard! This year's cider is made from a single variety, Stoke Red which has a beautiful bright acidity with lots of residual natural sugar to balance it. Coming in at 4.2%, it works wonderfully as an apéritif and its freshness is sure to make you think of the coming Spring. 



Food pairing suggestions

This cider works perfectly on it's own as an aperitief (we like to serve it in flutes) but also works well with some salty charcuterie or with large, buttery tasting Bella di Cerignola olives. Drink now unitl 2028.

The story behind the cider

Early in bleak January, when the fieldfares fly low over the last of the sodden seed heads and leafless trees cast cobweb silhouettes against cold, blue skies, we summon the spirit of the Green man to the orchard in the hope that with enough cajoling, he might bless the fruit trees with a bountiful crop come Autumn. 

The word wassail comes from the Anglo Saxon ‘Waes Hael’ meaning ‘good health’, and the tradition of gathering in the orchards was first recorded as far back at the mid 1500s. Wassailing for us has become an essential part of what it means to be a cider maker; if the promise of a decent haul of fruit wasn’t enough, the opportunity to foster community at the same time as sprinkling a bit of magic on the darkest month of the year is impossible to resist.

Carbon footprint

The CO2 emissons for 1x bottle of Wassail measures 1.001kg. 

We are hugely proud to be the first UK cidery to publish our carbon foot printing data. Since 2021 each bottle produced has contained this information on the label and we are pleased to say that the carbon associated with each bottle is decreasing with each vintage as we continue to make changes in the cidery. We believe that sharing this data is essential for us all to start being able to make conscious and informed choices about what we consume and the effect those decisions will have on our planet.

FAQs

How quickly will I recieve my order?

Everything is packed and shipped by us (Tom and Lydia) at the cidery and we aim to get all orders out within two days of purchase. If you need your cider more quickly, get in touch and we'll do our best to help!

 Orders are shipped via Parcel Force on a next day delivery service.

Does the cider have a use by date?

Unopened and stored in a cool, dry place our cider will be good to drink for around three years  As a general rule, like wine, cider has excellent capacity for ageing.

If the cider has been opened we recommend sealing with a champagne stopper and storing in the fridge for no more than 24 hours.

Is the cider vegan friendly?

Yes, our only ingredient is apples!

Is the cider organic?

We only use organically grown, unsprayed apples in our cider. Due to the number of orchards we care for belonging to other people we are not able to offically certify ourselves organic at this point in time.

Does the cider contain sulphites?

Our cider does not contain sulphites, however our perries contain a trace amount.

Who designs your labels?

All of the label artwork and graphic design is done in house by Lydia using traditional materials. The labels are printed onto recycled paper by a wonderful, local family run printing company and then stuck to the bottles by us using an up-cycled, and crucially, plastic free glue invented by Tom.
